Why Gluten Free?

Good question, and if you clicked on this page you may already know the answer.  A gluten-free diet is recommended for the treatment of celiac disease and wheat allergies. Gluten has also been tied to inflamation caused by auto-immune disorders and many believe that it exacerbates symptoms associated with Autism .It is a diet completely free of ingredients derived from gluten-containing goods: wheat (including kamut and spelt), barley, rye, and triticale, as well as the use of gluten as a food additive in the form of a flavoring, stabilizing or thickening agent.
